February is apple month so celebrate by making some coconut curry and lentil apple soup or a delicious apple cake served with coconut caramel sauce. Both of these recipes were enjoyed by my family.

You could also participate in the Good to Go Apple Contest and win money for yourself and a charity of your choice. I wasn’t going to submit a photo for the contest but this morning I woke up to find my children sitting on the couch eating apples. I couldn’t pass up the opportunity to take a few pictures and submit them.
